Island Sand™ Helps Make Bajan Sticky Hot Pepper Wings “Zing”...!

Chicken wings are internationally popular, a staple in a variety of countries, and rightfully so. Chicken are near globally available, and their wing meat’s balance of lean white and fatty dark meat make it ideal for deep-frying, tossing in sauce delicious sauce, and devouring off the bone with our own messy hands.

Since I’m in Barbados, I’ve happily aggragated to the bold spice and sweet flavors traditionally found here. And as such, I decided to implement some of those base flavors into a plate of chicken wings.

After pat-drying and seasoning some chicken wing drumettes and flaps with our own Island Sand™, I deep-fried them in oil and them tossed them in a pan already pre-cooking some Bajan (Barbadian) hot pepper sauce, Barbados (brand) sugar, cider vinegar, and onion powder.

I continued tossing them in the pan over medium heat to let some of the water evaporate out of the cider vinegar and help concentrate all those flavors not just in the sauce but in the chicken wing crispy skin and juicy meat as well.

And as mangoes are also popular in Barbados, I mixed puréed fresh mango with sour cream, mayo, and our own Garden Sand™ to make a savory mango dipping sauce, whose cooling, creamy, sweetness served as a perfect compliment to the bright and piquant spiciness of the wings.
